Spicy garlic rice with chicken & onion

My inspiration for this plating comes from my Ammu and Abbu. My mother isn’t a professional chef, but she has an incredible gift for recreating restaurant dishes at home. Whenever I treated her to something from a restaurant, like a true Bengali mom, she would confidently say, ‘I can make this even better!’—and the very next day, she would do exactly that, perfectly replicating the dish with her own special touch. My Abbu, on the other hand, never allowed me to cook before marriage. But after I got married, whenever I cooked something, he was so happy and would always ask me to send him some. That simple request made me feel proud and deeply connected to him. This plating is a tribute to both of them—Ammu’s fearless creativity in the kitchen and Abbu’s appreciation for my cooking. Through this dish, I celebrate the love, warmth, and encouragement that shaped my journey in the kitchen.
