
Botanical Bliss
For this dessert, I used a modern landscape plating style, placing the orange jelly pudding in a decentralized position while maintaining 35% breathing space to enhance its visual prominence. Inspired by nature’s organic flow, I balanced textures with an almond cookie crumb base, beetroot mousse, and fresh edible flowers for contrast and depth. The circular elements, including beetroot and orange slices, add structure and harmony, while the asymmetrical arrangement creates a sense of movement and elegance on the plate.
