Shish Tawook (Middle Eastern Grilled Chicken Skewers) Ingredients: For the Marinade: 2 large boneless, skinless chicken breasts (cut into 1.5-inch cubes) 3 tablespoons plain yogurt 2 tablespoons lemon juice 2 tablespoons olive oil 3 cloves garlic (minced) 1 teaspoon paprika 1 teaspoon cumin 1 teaspoon coriander ½ teaspoon cinnamon (optional, for extra warmth) 1 teaspoon oregano ½ teaspoon black pepper 1 teaspoon salt For Serving: Pita bread or rice Garlic sauce (Toum) or yogurt sauce Pickles, tomatoes, and onions Instructions: 1. Marinate the Chicken: In a bowl, mix yogurt, lemon juice, olive oil, minced garlic, and all the spices. Add the chicken cubes and coat them well. Cover and marinate for at least 2 hours (overnight for best flavor). 2. Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers. 3. Grill the Chicken: Heat a grill or grill pan over medium-high heat. Brush with a little oil and grill the skewers for about 4–5 minutes per side, turning occasionally, until the chicken is fully cooked and slightly charred. 4.
