Health On a Platter
This dish is inspired from Ethiopian bread called Injeera. They have a tradition of assembling different dips, veggies, salad, fruits on the bread and have it. For my platter, bread I made from Pearl Millet and Finger Millet. I poached the beetroot in a sweet-sour concoction. For the dips, I used Green Moong Chutney and Purple Cabbage Sour Dip. To add more colours I’ve sautéed some Laal Shak and cooked Spinach. For fruits, I’ve used Chilli Mango Salsa. And finally I’ve garnished this with some fried and creamy seasoned Garlic. Given all the items I have added here are cooked with maximum Heath benefit in mind, we’re calling this Health On a Platter
