A simple summer spread
This plate is inspired by our summer staples: Bhaat (rice), Chaal Kumra'r Torkari (wax gourd curry), Rui Maach (Rohu fish), and Aam Daal (Mango Lentil). It's fascinating how our seasonal dishes are often chosen with a kind of scientific intuition. To combat the summer heat, we gravitate towards watery vegetables like lau (bottle gourd), chaal kumra (wax gourd), and dhundol (ridge gourd). And to maintain balance and a cooling effect, the light, thin daal (lentil soup) is often paired with sour fruits like green mango or chalta (elephant apple). This plate is just a representation of that.
