Scarlet Bloom – Chicken Roulette in Beetroot Essence

The inspiration for this dish is a blooming garden in spring; with a focus in the rich vermillon color of the beetroot. When I created this dish, I wanted to craft something that felt both elegant and unexpected. The usual pairing of chicken and vegetables - but elevated in presentation. I added grilled lime for a hint of smokiness, mushrooms for an earthy depth, and delicate yellow flowers for a touch of whimsy and contrast. The green onion stalks rise from the back, mimicking how a tree grows in a garden. The simple ingredients yet complex visual is what makes this dish stand out.
