Add enough water to form a thick batter, not too runny, so it sticks well to the chicken. Coat and Fry: Heat oil in a deep frying pan over medium-high heat. Dip each marinated chicken piece into the batter and coat it evenly. Carefully place the chicken pieces in the hot oil, frying in batches so they don’t overcrowd. Fry until golden brown and crispy, usually about 4-6 minutes, depending on the size of the chicken pieces. Serve: Once the pakoras are crispy and cooked through, remove them from the oil and place them on paper towels to drain excess oil. Garnish with fresh cilantro and serve hot with mint chutney or tamarind sauce. Variations: Spices: You can adjust the spice levels based on your preference. Some people add garam masala or chat masala for extra flavor. Herbs: Fresh herbs like cilantro or mint can be mixed into the batter for a burst of freshness.
